Had friends visiting from Mexico so we set up a game night. Guess what we played! Yep, Bingo. We enjoyed a meal together and then played Bingo in English and Spanish.
Bingo Beef
1.5 lb beef roast, cut in thirds
1/2t salt
1/4t pepper
3 colored peppers, in strips
1 white onion, in strips
2 cans petite diced tomato, drained (14oz cans)
2t oregano
1t cumin
1t salt
1 bunch cilantro, chopped (optional)
1 avocado, sliced (optional)
1 small tin sour cream (optional)
Spray the crock pot with a little cooking spray for easier cleanup.
1/2t salt and 1/4t pepper the 1.5lb beef roast and place in the bottom of the crock pot. Top with 3 colored peppers, 1 white onion, 2 cans tomato, 2t oregano, 1t cumin, and 1t salt. Mix up the veg and spices then cook on high 4 to 5 hours (or 7 to 8 on low).
Shred meat, then serve topped with 1 bunch cilantro, avocado and sour cream.
